Martha goes Filipino: Chicken Adobo


Had a craving for Chicken Adobo.

Besides pinakbet, chicken adobo is of my favorite Filipino dishes and it's not hard to make!

I like to marinate my chicken overnight in the following ingredients:

4lbs of chicken - cut into the pieces, thighs are best

3 crushed cloves of garlic

1 cup of soy sauce

1 cup of white vinegar

1 cup of water

4 bay leaves

3 inches of ginger cut up

Whole peppercorns or freshly ground pepper.

1 tablespoon of brown sugar

I let my ingredients marinate overnight.

When I'm ready to cook it, I use a stew pot on medium high heat. Keep the cover on for an hour, and stir every so often. After an hour, take the lid off and put heat on high. Cook for another 15 minutes while liquid reduces.

And there you have it! You can adobo veggies, beef, pork, lamb, fish - anything! Go try um, go try um, go!
